I want to move country, help!!?

I am married with a 3 year old little boy and we live in Ireland. Myself and hubby have always talked about living abroad. Lately we have being playing with the idea a lot more with his job not being secure (he is a metal roofer). We are just unsure of where we would want to move and i am looking for ideas. So firstly we wouldn't want to move to far so somewhere in europe like france, spain, portugal etc., neither of us has a second language so an english speaking area would be a necessity until we learn the lingo. Wouldn't want to live in a city, countryside suits us better. Weather wise wouldn't want doom and gloom like ireland, would love warm sunny weather but preferably not sweltering heat. Also if anyone knows about these countries could you give me info on taxes and things, and things that us being foreigners to these countries would need to know. Also we would be renting. Does anyone know how we could look up jobs before we got out there? I know there is a lot of questions in this but any info would be great, thank you
